with every shark attack not every one of them brings gore and blood but when a human attacks a shark, gore and blood happens all the time.

Actually, that is a possible scene. The teeth of a Great White Shark can Clamp on very powerfully, so the blood may not get spilled out very fast. Remember, this was slomo, not normal time. The narration said itself that this lasts near a second, so the blood wouldn't have time to spill out due to the gravity pull of the teeth into the seal during its downfall that fast. So, this MAY as well be a real seal, or, just because results coudn't pop up, they placed a decoy.
